Smoked Fish Cakes


  • 1 large golden kumara
  • 250g smoked white fish
  • ¼ cup Maison Therese Bread & Butter Pickle – squeeze out liquid
  • ½ cup parsley
  • ¼ cup chopped dill
  • 1/4 cup mayo
  • 1 egg
  • ¼ cup panko crumbs plus extra for dusting
  • Serve with Maison Therese Tomato Relish or Sweet Chilli Relish and a light green salad.

Serves 3


  1. Pre heat the oven to 190 fan bake. Slice the kumara into chunks. Season well and drizzle with oil. Bake for 25 minutes until cooked.
  2. Once cooked, mash the kumara in a mixing bowl. Break up the smoked fish into small chunks. Chop the herbs and also the Bread & Butter Pickle so they are finely diced.
  3. Mix in the mayo, egg and panko crumbs with your hands and then make 6 patties. Dust with extra panko crumbs on both sides.
  4. Ready a pan with a good glug of oil, fry the patties on a medium to low heat on both sides until crispy.
  5. Enjoy with a spoonful of Tomato Relish or Sweet Chilli Relish.
