Mussels in a Chilli Tomato Sauce

Brought to you by:


  • 1 x 500g pack of Omega Mussels
  • 1 x chorizo sausages, chopped into slices and then halved
  • 3 Tbsp Maison Therese Tomato Relish
  • 1 Tbsp olive oil
  • 1 clove of garlic
  • 1 red chilli, sliced
  • 1 punnet cherry tomatoes, halved
  • 1/2 cup white wine or stock
  • Parsley to garnish
  • Sourdough loaf with garlic oil, toasted
  • Rocket salad to serve

Serves 3 – 4


  1. In a medium saucepan, pan-fry the chorizo for a couple of minutes or until brown. Set aside in a small bowl.
  2. In the hot pan over medium heat, fry the garlic and red chilli in olive oil and then add the Maison Therese Tomato Relish and simmer for 2 minutes.
  3. Add the cherry tomatoes and blister for a couple of minutes, then add the wine or stock and let simmer until reduced.
  4. Meanwhile, prepare the mussels and add once the sauce has reduced.
  5. Warm the mussels and serve with toasted garlic sourdough, rocket salad and a glass of wine.
